Old-fashioned æbleskiver

Ingredients

  • 2 eggs
  • ⅓ cup sugar
  • 1 tsp baking powder
  • 1⅓ cups plain flour
  • ¾ cup milk
  • ½ tsp salt
  • 2 tbsp butter, melted
  • 1 tsp cardamom extract (or ½ tsp ground cardamom)
  • lemon juice and grated lemon zest (optional) (Instead of the cardamom extract.)
  • apple, in small pieces

Method

  1. Whisk the eggs, sugar and milk together well.
  2. Then add the dry ingredients and melted butter (and the cardamom extract, or the lemon juice and zest) and mix well.
  3. Heat an eplaskífur pan (a pan with round hollows, also sold as an æbleskiver or ebelskiver pan) and grease each hollow with butter. Fill the hollows about two-thirds full.
  4. Push a piece of apple into each one in the pan.
  5. Turn them with a knitting needle or skewer once the bottom has set, and cook until golden brown all over.
  6. Serve dusted with icing sugar (and with jam).
